Summer Pasta

We never know how long summer will last. When it’s hot, food is mostly salads and fresh fruit, but every now and then my husband requests “real food” i.e. a warm dish. Even then I reach for something easy and quick. This dish is one my stepmom made for us several years ago, but it has been in my summer repertoire ever since. It’s easy, quick and delicious. Plus, it’s one of my husband’s favorites.

Pasta with Tomatoes, Feta and Basil

  • 2 garlic cloves, sliced
  • Olive oil
  • 300 g cherry tomatoes, halved or quartered
  • 200 g Feta, crumbled
  • 1 bunch of basil, coarsely chopped
  • 300 g pasta

Bring water to boil in a large pot. Add pasta and cook until al dente.

Meanwhile, heat some oil in a skillet and lightly sauté the garlic. Add the tomatoes and sauté over low to medium heat until soft, but not mushy. Right before serving, add the basil and the Feta and carefully stir to mix. Take care not to completely melt the cheese.

Spoon pasta in prepared dishes and top with the tomato mixture. Serve with a green salad.
